A completely natural wine! This wine was made entirely without the additional of yeast. Instead of inoculating with yeast, our winemaking team allowed wild yeasts to entirely ferment this wine. After a long, slow fermentation the wine underwent tank aging before bottling. Compare this one to our Gewurztraminer 2009 which is made using the same juice but had undergone a controlled fermentation using typical Gewurztraminer yeast. Only 28 cases made.
